Now what? I found this recipe.
My changes were:
I made a half recipe, so, only half of a sweet potato, and one bulb of fennel, only 2 cloves of garlic, minced.
Also:
I added the stems of the fennel
I added some swiss chard
Instead of four big chiles, I used one dried thai dragon chile, cut up.
I used pepitas (the green squash / pumpkin seeds) instead of the big, white pumpkin seeds
To use the swiss chard, I roasted the ribs with the other veggies:
I cooked the green parts of the chard briefly, separately, and added them along with the london rocket, when the roasted veggies were caramelized.
I used the leafy parts of the fennel, along with some lemon slices, to infuse the halibut with some flavor.
I think I went a little overboard with the rocket though. It kind of dominated the flavor. Next time I'd scale it back a little bit.
BTW this is where I got my london rocket.
