Cheesey Broccoli Patties

Here is a link to a cheesey broccoli patty recipe. It sounds like the zucchini recipe in the forums.  I thought it would be fun to play around with combinations of veggies from your garden in this recipe.  I have not tried it yet, but I definately plan on it.

  • If those taste only half as delicious as they look, they'd still be worth it!  Thanks for posting the recipe Grace, I can see how it could be adapted for a range of yummy veggies.

    • Thanks Leanne, I bought panko crumbs and plan on making the recipe this week.  I will let you know how it turns out.

    • I tried the recipe and it turned out great.  I was surprised how crispy the patties got in the oven.  The recipe was easy and very little cleanup.  I can't wait to try different different veggie combinations.

      Tips: I think the recipe could use some herbs or spices to kick it up a little.  I used colby cheese instead of the recommended chedder and parmesan.  The cheeses in the recipe have a stronger taste so that would make a bolder flavor.

      I added extra fat(butter) when I sauteed the onions, I was concerned the patties would be dry without it.  The extra fat was not needed.  I think maybe there is enough fat in the cheese to make the patties crunchy, so always use cheese.

    • Good to know you tried it Grace.  I picked up some cheddar for this purpose and look forward to trying the recipe.  I will probably make my own breadcrumbs.  Colby and cheddars have a lot of fat in them which is 'rendered' when heated, so that would explain why you didn't need the butter.  I always like the idea of adding herbs and spices.  Thank you for the tips!

    • Catherine, Let me know how the breadcrumbs work.  This is my first time using the panko crumbs and I was surprised how crispy they were.  I want to come up with a successful "oven" fried zucchini recipe when the squash season hits.

    And you are right it gives me lots of ideas.  On the idea of swapping out what is growing in your garden, I've been reading a great Italian Countryside cookbook and something I've been doing is making some form of pasta where you add the veggie (we are harvesting our asparagus now) right in with the pasta, strain and sauce with whatever you prefer.  One o the recipes calls for adding one potato (sliced or diced) to the water before the pasta and veggies - that also turned out nice (p.s. I do not peel my potatoes).

    I'm waiting for enough sugar peas to do a meal with them in the pasta, but I am for sure going to try our asparagus as a cheesy patty.

    • Thanks Catherine,  That recipe popped up on my Facebook and thought I have to try it.  That is a cute little website, the crispy fried greens and banana foster sticky buns recipes sound good too.

      The pasta and veggies sounds like a great idea.  I don't have a lot of time to make meals, so one pot meals is very helpful.

      Hehe, where is my asparagus?  I just look at the bare spot of dirt and wait for something to grow.

    • I remember you just planted yours Grace last year or this year, either way depending on how much cooler or warmer your garden is generally it may be a week or so before you see them popping up :-)
