Now that the milling has ended, time to bake up some tasty treats! I haven't baked with mesquite four, but next year we are planning on harvesting. Here is a recipe a friend shared with me from the Arboretum. Happy baking!SONORAN COOKIESMakes about 24 cookies2 Cups of whole wheat or white flour1 Cup Mesquite flour2 tsp. baking powder1/4 tsp. baking soda1/2 Cup sugar1/2 tsp. cinnamon2 eggs1 Cup vegetable oilPreheat oven to 375 degrees F.Blend dry ingredients in a medium bowl.Beat eggs lightly in another bowl; add oil and blend.Combine all ingredients until well mixed.Roll small amount of dough into a ball and put on ungreased cookie sheet.Bake for about 15 minutes or until lightly browned. (You may have to adjust the time according to your oven.)

mmmmm.thanks! While we're on the subject, anyone have any recipes for carob cookies?? Or can you just substitute the carob flour for the mesquite for a different sort of flavor?
