A fun recipe using cauliflower

Hi Folks,

This sounded good enough to share - I can see lots of herb options to add to the mix:  rosemary, thyme, basil, some of the leafy types parsley, cilantro, chervil.

Cheesy Cauliflower Patties = YUM YUM!

1 head cauliflower
2 large eggs
1/2 c cheddar cheese, grated
1/2 c panko
1/2 t cayenne pepper (more of less to taste)
salt
olive oil

Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste.

Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

  • I found another nice sounding recipe for cauliflower so I thought I would add it to this thread.

    I think I would swap out the cream cheese for yogurt cheese or Greek yogurt and maybe the feta for parmesean, but that is the nice thing about these types of recipes, you can make it your own!

    Cauliflower Spread
    Ingredients

    1 medium head cauliflower (2 pounds), trimmed and broken into florets (about 6 cups)
               
    2    ounces cream cheese, softened
               
    1/2   cup crumbled feta cheese
               
    2   tablespoons olive oil
               
    1   tablespoon lemon juice
               
    1/4  teaspoon salt
               
    Snipped fresh oregano
               
    Directions                       

    Cook cauliflower in a pot of lightly salted boiling water, covered, for 15 minutes. Drain; cool. Transfer to a food processor. Add cream cheese, feta cheese, oil, lemon juice, and salt. Process until smooth. Transfer to a bowl. Cover and chill for up to 3 days. To serve, sprinkle with snipped fresh oregano.

  • That sounds great.  I would top mine with salsa.  I recently found a cauliflower recipe that sounds good but I haven't tried yet:

    Mashed Cauliflower

    I would certainly spice that up a bit.

    Speaking of cauliflower, we liked this Cauliflower Rice:

    Cauliflower Rice
    4 tablespoons olive oil                        
    1 medium onion, diced
    1 cup celery, finely diced
    1 head cauliflower, trimmed and coarsely chopped
    ¼ teaspoon celtic sea salt

    1. In a large skillet , heat olive oil over medium heat
    2. Saute onion over medium heat for 10 minutes, until soft
    3. Add celery to skillet and saute for 5 minutes
    4. Meanwhile, place cauliflower in a food processor with the "S" blade and process until the texture of rice
    5. Add cauliflower to skillet, cover and cook 5-10 minutes, until soft, then add salt

    Enjoy!

    • The "rice" recipe sounds good Mary - I need to put make sure I come back to this page when cauliflower comes back in season.

      FYI - just for the heck of it I left my purple cauliflower plant "in" after I harvested the head - it looks awful, but the leaves are huge and I'm hoping it will 'summer over' and start new growth in the fall - we will see :-)

      The mashed recipe looks good too.  Our farmers at the Mesa Farmers Market usually have beautiful cauliflower - have to buy more this next winter.

    • Heather, no it did not, it was hanging in there, barely, and went I went to start planting some fall seeds along side it I found it was completely dead, so I pulled it.  It has full sun exposure and that is probably why it did not summer over.  I have had them summer over where they got some afternoon shade.  Didn't work this time :-)

  • Thanks!  My husband likes using cauliflower as a sub for carbs - and this doesn't have much bread in it.  You could use this instead of toast for breakfast even. :)

    I will probably end up putting paprika and garlic in it though along with some parsley.
